I had a friend in college who became a nun several years after we graduated. She is my friend who had no problem whatsoever bending the rules if it was in everyone's best interest...you know the type, total life of the party. My rule following self sure admired her. Anyway, when she got ready to head into the convent, there was a very short list of items that she was allowed to bring in with her, like one pair of black shoes and some undergarments. Well, see, my friend was a lifelong coffee drinker and when they told her what time she was going to be getting up for morning prayers and that there wouldn't be any liquid caffeine, she took matters into her own hands.
Along with her very stylish black shoes, she slipped in some packages of chocolate covered espresso beans when she arrived, for emergencies of course. I'm not sure how long she crunched on those during morning prayer before the sisters caught onto her little secret. Those good-natured nuns made an excellent joke of it and my friend became somewhat of a legend. I'm still laughing.
Ever since she told me that story I thought, I gotta get me some of those. I just had no idea how easy they are to make!
If you need a little pep in your morning prayers, or just an afternoon pick-me-up, whip up a super quick batch of these little energy zingers and prepare to power through!
Melt chocolate on the stove over low heat.
Remove chocolate from heat.
Stir in espresso beans and coat thouroughly.
Drop individually onto baking sheet.
Let cool in fridge and store in airtight container.
